Sweet Corn Salsa

It's corn season and I'm making the most of it.  Sweet and spicy salsa will be the hit of your weekend parties. Use asparagus chips for the best healthy dish!

  • 2 cobs of corn
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 1/2 yellow or orange pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup basil or cilantro, chopped
  • juice of one lime
  • salt and pepper to taste


  1. Brush corn lightly in olive oil and season with salt. Heat cast iron fry pan on medium and sauté corn until kernels begin to char. (You can also grill the corn if you prefer) Set aside to cool.
  2. In a medium bowl, combine tomatoes, onions, yellow or orange pepper, jalapeno, cilantro/basil, lime juice, and salt and pepper. . Add sautéed corn and stir to combine. Serve with tortilla chips.
