Risotto Stuffed Tomatoes

Risotto Stuffed Tomatoes are such a delicious entree or appetizer, you could really serve this in so many different ways.  I love how filling they are, yet low in total calories and really easy to make. Risotto is delicious and when combined in these beautiful fresh tomato halves, you can’t go wrong!

Risotto Stuffed Tomatoes: A Flexible Dish For Many Occasions

If I said I had a confession to make would you say,| “Uh oh, what’s she going to confess THIS time?”  Ha!  Nothing dramatic although it is kind of odd.  I’ve NEVER cooked risotto before!  I’m not sure why really because I love it in restaurants and at friends’ homes but it always seems to me to be something you ate somewhere other than home.  I made these Risotto Stuffed Tomatoes last year for the first time and have had it many times since. So easy!

By adding spring onions, zucchini, mushroom and a little heat with red chile flakes you’ve got a scrumptious side dish or main.  If you use the smaller tomatoes, they’re great as a snack, too.  You’ll definitely want firm tomatoes (on the vine if possible) to ensure they don’t crumble under the heat.  They’re also easier to cut and scoop.

Lots of recipes call to separate the seeds but to heck with that.  I scoop out the pulp and remove the hardcore and mash the rest.  I’ll skip my usual rant about fresh herbs because I ran out of parsley and oregano so was forced to use dried.  I did use fresh basil and thyme though.   Some good Parmesan is a must as well.  You don’t want to go to the trouble to make this delectable dish and then ruin it with cheap cheese, right?

Risotto Stuffed Tomatoes

A delicious side dish or main made with spring vegetables stuffed into tomatoes and baked. Light, healthy and full of flavor. Risotto Stuffed Tomatoes are going to be your new favourite!

Cook Time: 15 minutes
Total Time: 45 minutes

Ingredients

  • 4 tomatoes medium sized
  • 2 tsp olive oil
  • 1 garlic clove minced
  • 1/2 cup risotto rice
  • 1/4 tsp red chili flakes
  • 2 spring onions chopped
  • 1 small zucchini chopped
  • 3/4 cup mushrooms wiped and sliced
  • 1 cup vegetable stock (low-sodium, organic if possible)
  • 2 tbsp fresh herbs a combination of parsley, basil, oregano, chopped
  • 1 tbsp Parmesan finely grated, omit for vegan
  • sea salt and freshly ground pepper
  • fresh thyme or basil for garnish

Instructions

  • Preheat oven to 350F
  • Slice the tops off the tomatoes and set aside. Scoop out the seeds and pulp from the tomatoes with a teaspoon, but be careful not to cut through to the base. Chop the pulp and seeds. Toss the hard, central core.
  • Heat the oil in a medium saucepan and add garlic, sauteing for 2 minutes. Add rice, chile flakes, onions, zucchini and mushrooms, stirring over low heat for 2 minutes.
  • Pour in the stock then stir in the fresh herbs, tomato pulp and seeds.
  • Cook for 15 minutes, stirring frequently until rice is tender and liquid has been absorbed – add extra stock if necessary.
  • Turn off the heat, add Parmesan. Season with salt and pepper and stir well.
  • Put the tomatoes in an ovenproof dish and fill each one generously with the risotto. Replace tomato tops and bake, uncovered, for 15-20 minutes until the tomatoes are tender. Cool for 5 minutes, then garnish with fresh thyme or basil.

Roasted Grape Tomatoes With Herbs

Try these Roasted Grape Tomatoes With Herbs as an easy and quick way to eat those delicious tomatoes you bought at your local market.  The herbs added to these sauteed grape tomatoes really make this such a flavorful appetizer or side dish to your entree that you will definitely want to make it again!

Quick And Easy Roasted Grape Tomatoes

I buy a LOT of tomatoes every week.  Sometimes beefsteak, sometimes heirloom, pretty much whatever looks freshest and catches my eye.  It never fails that I have too many and I have to search for ways to use them in a hurry.  I often roast them in the oven like these scrumptious delights,  and that method works great for the larger tomatoes but I had lots of little grape tomatoes this week and had very little time so I decided to do them in my cast iron pan on the stove top and wow – I hit the flavor jackpot!  Can you believe these little gems took less than 10 minutes?

You can use these with pasta, sandwiches, bruschetta or add a little cheese for a delightful appetizer.  You can also freeze these for a future lasagna sauce if you can’t use them right away. Imagine how much your kids are going to like them when you want to get those extra veggies in them!

Add Herbs For The Final Touch

Use your favorite herbs in this one and there is no rule as to what’s right.  I used basil, a little Thai basil and thyme (both dried and fresh) along with pepper.  I added a wee bit of salt after cooking but I generally go easy on salt with all of my dishes.  Some garlic would be fabulous.  The nice thing about a dish like this Roasted Grape Tomatoes recipe is that there isn’t a set amount of herbs you can add.  What kind of herbs do you like? If you aren’t a fan of the thyme, then leave it out. There is no end to the amount of flavor that you could add to make these sweet little tomatoes that much more delicious!

Delicious little gems bursting with the sweetness from the roasting and fresh herb flavors. Perfect for sauces, appetizers or sandwiches.

Ingredients

  • 3 tbsp olive oil extra virgin
  • 2 pints grape tomatoes (or cherry)
  • 1/2 tsp dried basil
  • 1 tbsp Thai basil chopped
  • 2 tbsp fresh basil chopped
  • 2 tsp fresh thyme plus more for garnish
  • 1/4 tsp black pepper freshly ground

Instructions

  • Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer.
  • Add the tomatoes, basil, thyme, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to pop. Sprinkle with a little fresh chopped basil and serve hot or at room temperature.

The fresh green beans and tomatoes in this tomato basil salad make it a healthy choice for any season, but in particular, it makes a great salad for the Fall.  The dressing is sweet and simple and tastes delicious with the basil when drizzled over the vegetables. Enjoy this simple and beautiful looking salad for any casual or fine-dining occasion.

A Simple Tomato Basil Salad For Any Occasion

So you may have guessed by now that I’m in love with heirloom tomatoes!  I know I did a similar salad to this a couple weeks ago but when I looked in my fridge and saw more green beans and heirlooms there was just no turning away.  This HAD to be made!

This tomato basil salad is great to make around Thanksgiving because they tomatoes and green beans are fresh for the picking.  I spent time at Barrie Hill Farms a few weeks ago and the green beans look amazing! This salad will make a lovely side dish for Thanksgiving or any occasion.

I picked up a giant basil plant at the farm earlier in the summer and it has been a real joy to use the large, beautiful leaves in so many dishes.  This dish can’t be any simpler – tomatoes, green beans and basil.  The dressing is simple too but if you want to change it up feel free.

Tomato and Basil Salad Tips

When it comes to salads, I can go wild with loads of ingredients and flavours like this Halloumi and Za’atar Fattoush Salad and those are lots of fun to assemble but then I go completely the other way and pare it down to the bare minimum.  When you have farm fresh produce, I think it’s the best way to go.  They don’t need much – their natural taste shines.  The best thing about this salad is it’s bright colours and it will dress up any meal from casual to fine dining.

You don’t want to steam your beans for more than 1-2 minutes in order to retain their nutrients.   They are chock full of Vitamin K, Vitamin C, manganese and fiber just to name a few.   Besides, your kids will enjoy the taste much more if they’re not cooked to death.  Did your mom cook your veggies till they were limp when you were a kid? lol.  Mine did and now I barely steam them for more than a minute!  No saggy, sad veggies on my plate!

Aren’t those salad plates cool?  I got them from GlucksteinHome.  If you’re in Canada you can find them at Home Outfitters or The Bay.  Love them!  Ok, I’m taking a break from heirlooms for awhile and right now my mind is busy with Indian meatballs.  It will be so interesting to see how these turn out!  Can’t wait to share them with you.   Cheers!

Ingredients

  • 1 pound green beans (I used yellow as well), washed and trimmed
  • 1 pound tomatoes (I used heirloom but any type will do), halved
  • 1/4 cup fresh basil leaves

Dressing:

  • 1/2 cup olive oil extra virgin
  • 1/4 cup red wine vinegar
  • 1 tsp lemon zest
  • 1 tsp honey

Instructions

  • Blanch the green beans in a pan of boiling water for 1-2 minutes. You want them tender but still crisp. Transfer to a bowl of ice water to stop the cooking process and cool. Pat dry and cut into 2-inch pieces.
  • Combine beans, tomatoes and basil leaves.
  • Combine the dressing ingredients in a small bowl and whisk until combined well. Drizzle over vegetables, toss gently and serve.

Bruschetta with Mozzarella, Asparagus and Tomatoes

This Bruschetta with Mozzarella appetizer will be a hit at home and for any party you attend.  The flavors of the mozzarella combined with the asparagus and tomatoes create an excellent combination that tastes great and feels great! You can substitute the cheese for goat or bocconcini and add your own flavors to mix together with the asparagus and tomatoes. The mint and orange zest also add a nice sweet and tasty combination!

I started out writing this post by saying, ‘bruschetta recipes are my favourite’ and then I realized I say that about shrimp, meatballs, salmon, berries, tomatoes….the list goes on and on.  I guess I feel passionate about all the things I make and this one is no exception and best of all, it falls under the quick, easy and healthy category.  I had tons of fun at Barrie Hill Farms where I was able to pick up fresh asparagus and tomatoes and combine them to create this tantalizing appetizer!  Asparagus and tomatoes can be used to create lots of other simple and healthy recipes.

Bruschetta with Mozzarella is a Flexible Recipe

This isn’t your average appetizer.  I’ve thrown some orange zest and garlic in there and with the added fresh mint and chives, the flavours are out of this world.  You can put the tomato on and lay the asparagus on top or you can chop them into smaller pieces and mix them together for more of a bruschetta style (or do both like I did).  It will depend on your patience that day because it takes a little more time to assemble them this way but it was worth it – don’t they look cute!

I used both bocconcini cheese and mozzarella (sometimes goat cheese) cheese simply because I had a little of both and wanted to use it up.  They were equally delicious.  You can drizzle a little more olive oil on it before you serve if you like but I find if you’re serving to guests this can get kind of messy on the fingers and they won’t present so well on the plate after a while.  If you’re just having them with your partner at home,  – go with it!

Ingredients

  • 1 handful Asparagus cleaned, woody tips cut off, sliced on the diagonal
  • 1 wholegrain baguette or other bread of your choice
  • 4 ounces fresh mozzarella or goat or bocconcini
  • 1 cup cherry tomatoes sliced half
  • 2 tbsp orange zest freshly grated
  • 1 tbsp garlic minced
  • mint leaves minced
  • chives minced
  • olive oil to drizzle, optional
  • freshly ground black pepper
  • kosher salt

Instructions

  • Preheat oven to 350 F
  • Cut baguette, brush lightly with olive oil and bake on cookie sheet until golden. About 15 minutes.
  • Blanch asparagus in salted water until tender – about 3 minutes. Let dry or use paper towels.
  • Mix cherry tomatoes, asparagus, garlic, orange zest, mint, chives, olive oil, salt and pepper to taste.
  • Slice cheese into discs and place on toasted baguette pieces.
  • Place mixture on top of cheese or put individual pieces for a more finessed look.

This is my favorite time of year for many reasons – green grass, the birds returning, leaves on the trees and best of all – fresh, local produce!  I’m so excited to be working with Barrie Hill Farms again this season and now that the asparagus is finally ready (we actually had snowflakes this past weekend!!), I’ll be visiting each week to bring you fresh, seasonal recipes.

Asparagus seems to be growing in popularity on the internet.  At this time of year, there are so many creative ways to use this delicious veggie and people are flocking to farmers’ markets to get their hands on some freshly picked ones.   I am feeling that same inspiration that hit me last year each time I went to the market.  Being surrounded by so much fresh-from-the-field produce just makes me happy!

Asparagus Salsa Uses Simple Yet Delicious Ingredients

If you don’t have a grill, you can roast the asparagus for this recipe.  There are only a few ingredients but each one packs a punch.  The taste is going to surprise you because the flavors meld together in an unexpected way.  SO darn delicious!

All the best parts of a great dish – fresh ingredients, strong complementary flavors with a zing of lime that you’ll find addicting.  Making this asparagus salsa is easy and is unique and different from most salsas that it is bound to be a hit with anyone!   • 1 lb asparagus lightly grilled, sliced to 1/4"
  • 4 large tomatoes diced 1/4"
  • 1 Serrano chili finely chopped
  • 4 green onions sliced thinly
  • 1/4 cup fresh cilantro roughly chopped
  • 1 large lime squeezed
  • salt and pepper season to taste
  • 1 garlic clove finely chopped or crushed

Instructions

  • Mix all ingredients together in a bowl and leave for 30 minutes for ingredients to infuse. Serve with Asparagus Tortilla Chips.

Sometimes simple is best, and that’s definitely true for this Asparagus Tomato Salad.  When you have the great flavors of tomatoes, asparagus, and some good quality cheese, it really doesn’t get any better than that so why fool around with it.  We just need some onions and fresh herbs in there and your asparagus tomato salad just becomes a big bowl of fresh deliciousness.

Asparagus Helps With Anti-Aging

The best thing about this asparagus tomato salad dish is the local, fresh picked asparagus from Barrie Hill Farms.   Aren’t they just beautiful? It was hard to resist the urge to scoop them all up.  There was a beautiful selection of fresh herbs as well and basil seemed like the logical choice. 

Asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.  It is also packed with antioxidants, ranking among the top fruits and vegetables for its ability to neutralize cell-damaging free radicals. This, according to research, may help slow the aging process.  Who would have known that this green vegetable has such powerful nutrients that are so good for us!

Get Creative With Your Asparagus Tomato Salad

I used feta cheese but you could also use gorgonzola, or simply omit the cheese altogether for a vegan-friendly dish.  I had thought avocado would go well with this and I brought some home but completely forgot to add them!  I think it’s because I secretly hate cutting up avocados because I can never get the pieces to look right – it all comes out looking like a mess!   Tomatoes and avocados are one of the first dishes I made for the blog.  If you would like a chuckle, check out this old recipe and photo.

You can be as creative as you want with your dressing but, like the salad, I wanted to keep it simple.  Extra virgin olive oil, Dijon, lemon and some salt and pepper made the flavors pop in this dish.  This Asparagus tomato salad will be a hit with friends and family any time and it’s so quick to throw together.  I hope you enjoy it as much as I do.  Cheers!

Ingredients

  • 1 pound asparagus washed and trimmed
  • 5 cups tomatoes grape, cherry, heirloom – your choice

  • Boil asparagus for 2 minutes, drain and rinse in cold water. Pat dry with paper towels.
  • Combine asparagus with tomatoes, onion, gorgonzola and basil leaves.
  • Combine dressing ingredients and drizzle over salad.

Spicy Sauteed Shrimp with Maple Roasted Asparagus and Tomatoes

This spicy sauteed shrimp recipe combined with the fresh maple roasted asparagus and tomatoes is a delicious and healthy combination of fresh produce with a tasty marinade that you will want use on many other of your favorite dishes!

Roasted Asparagus and Tomatoes

I finally got out to Barrie Hill Farms two weeks ago where I was so excited to see freshly picked asparagus.  The strawberries weren’t quite ready yet but that’s no surprise given the arctic winter we had!  It will be another couple weeks before they’re ready but I’ll be there as soon as there are and look for some great recipes featuring berries. Asparagus though is one of my favourite veggies and after using a lot of it in salads, I had some leftover for roasting.

(Just a quick note about using raw asparagus in salads.  I use my peeler to strip the outer layers off when I’m eating it raw because it tends to be quite woody if uncooked.  It’s a lovely bright green beneath and wonderfully crunchy so will make a great addition to any salad.)

I am passionate about these three ingredients so I am always looking for ways to incorporate all of them into a recipe.  This is as simple as it gets.

 Spicy Sauteed Shrimp Marinade For Vegetables

I bought some Maple Orange Garlic Sauce at the market to try on the grilled garlic shrimp in the future but it got me thinking to try it on the roasted veggies.  I made my own by combining some olive oil, orange zest, orange juice, maple syrup, fresh basil, and pepper and drizzling it over the veggies – wow, what a lovely surprise.  I thought I might be overdoing it by mixing that many flavours together but it was lip-smackingly delicious!

I wanted a contrast with the shrimp so made it spicy with Asian chili sauce and garlic and ginger.  It certainly kept my taste buds hopping and of course, I always overdo it with the spice so it was good and hot.  No worries, I adjusted the measurements for the recipe.

This spicy sauteed shrimp dish is a nice side plate and especially easy to do for gatherings with a lot of people.  It’s also a great dinner for us pescatarians.  I keep trying to convince myself that I can switch to a diet that is entirely plant-based but I don’t know how I can give up my seafood – especially shrimp!  I guess it will be a work in progress.

This can all be done on the grill as easily as the oven so let the griller in the family take over for a change.  Cheers, everyone!

Spicy Sauteed Shrimp with Maple Roasted Asparagus and Tomatoes

Ingredients

  • 1 bunch trimmed asparagus (cut in half if thick)
  • 1 pint cherry tomatoes halved
  • 1/2 pound shrimp shelled and deveined
  • 1 clove garlic sliced thinly
  • 1 small handful fresh basil chopped

ORANGE/MAPLE GLAZE

  • 3 tbsp extra virgin olive oil
  • orange zest from half an orange
  • 1/2 juice from orange
  • 2 tsp pure maple syrup
  • 1/2 tsp finely chopped fresh basil
  • dash of freshly ground pepper

SHRIMP MARINADE

  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 tsp asian chilli garlic sauce (optional)
  • dash of freshly ground pepper

Instructions

  • Preheat oven to 400F and line baking sheet with parchment paper.
  • Arrange asparagus, tomatoes and garlic in single layer and drizzle with Orange/maple glaze.
  • Roast for 12-15 minutes.
  • Mix ingredients for shrimp marinade and add shrimp, marinating for 15 minutes.
  • SHRIMP: oven method: Add to asparagus and tomatoes after 5 minutes, roasting shrimp for 10 minutes.
  • stove top: sauté in small saucepan on medium high heat for no more than 11/2 minutes per side. Add to roasted asparagus and tomatoes and serve immediately. Top with fresh basil.
