Versatile and fun to let your creativity go wild with, potatoes are the star of any meal. But did you wanna know some cool facts about potatoes?

  • Potatoes have a Spanish origin and were originally called “Patata”. It changed in 1950 to potato but we often refer to them as Spuds, tater or tattie.
  • China is the worlds largest potato producer
  • Potatoes are 99.9% fat free

  • At one time in back in the 1890s potatoes were so valuable that they were traded for gold directly

Roasted Potato Salad with Dill

There is nothing better with any meal than new potatoes. Served hot or cold. Mashed, roasted, fried, sliced. Your wish is there command. Its the perfect addition to any meal that will get your creative juices flowing.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 lbs small new potatoes the best is a mix of red & white
  • 1 bunch green onions
  • 1 tbsp dill weed if using fresh use more
  • 1/2 tsp sea salt
  • 1 tbsp cracked black pepper
  • 1/2 cup mayo whipped is best
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 1 tbsp Grainy or Djion Mustard

Instructions

  • Wash potatoes and shake excess water off them
  • Place potatoes on cutting board and cut potatoes in half placing them in the bowl
  • Drizzle potatoes with olive oil, salt & pepper. Place on cookie sheet with parchment paper and bake for 35 minutes
  • In a mixing bowl. Whisk together mayo, sour cream, lemon juice, dill weed, and finely minced green onion and place in fridge until needed
  • Remove potatoes from the oven when cooked through and slightly golden & let cool
  • When potatoes are fully cooled fold into mayo mixture. Cover with saran and leave in fridge until serving
  • For a fun twist add grated carrot, finely chopped assorted peppers, thin sliced radish,
  • Enjoy with those you love
