How fun is this salad? All the goodness of fresh farm produce all mixed into one! Best of all it takes no time at all because while you’re roasting the corn and potatoes, you can prepare your other veggies and viola – a gorgeous salad that your kids will gobble up!

Roasted Potato Salad with Tomatoes, Peppers and Roasted Corn

Prep Time: 15 minutes

Ingredients

  • 2 lb. small potatoes or small Yukon Gold potatoes, washed and cut into 3/4-inch chunks
  • 3 tbsp extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 ear fresh corn, in the husk
  • 1/4 cup plus 1 tsp. extra-virgin olive oil
  • 2 cups red, yellow, or orange cherry tomatoes (or a combination), halved
  • 1/2 red bell pepper, cut into 1/4-inch dice
  • 1/2 small red onion, cut into 1/4-inch dice
  • 1/2 yellow bell pepper, cut into 1/4-inch dice
  • 1/2 cup chopped fresh basil
  • 2 small cloves garlic, finely chopped
  • 3 tbsp red-wine vinegar

Instructions

  • Cook potatoes and corn at the same time. Preheat oven to 450 F.
  • Put cut potatoes in large bowl and drizzle with olive oil, add salt and pepper, tossing well to ensure they are well coated.
  • Spread out evenly on baking tray in single layer and bake for 20 – 30 minutes until golden brown.
  • Remove the husk and put the corn on a small baking sheet. Drizzle 1 tsp. of the oil onto the corn and rub it over all the kernels. Sprinkle with kosher salt and pepper. Roast, turning the cob occasionally, until the corn kernels are light brown in a few spots, about 20 minutes. Let the corn cool. Cut the kernels from the cob.
  • Add the corn, tomatoes, red, green, and yellow peppers, onion, basil, and garlic to the potatoes. Toss gently. Whisk the remaining 1/4 cup oil and the vinegar together and add to the salad. Toss again. Season with kosher salt and pepper to taste and serve immediately

You definitely want to go organic and check for GMO labeling when buying corn or any corn-containing products. Because aside from having other problems, GMO corn doesn’t contain the same level of beneficial vitamins, minerals and antioxidants. Organic corn is a vitamin C and magnesium rich-food and contains certain B vitamins and potassium. It also supplies a good dose of two antioxidants linked to eye and skin health called zeaxanthin and lutein. (source)

Ingredients

  • 4 slices bacon, cut into 1-inch strips I used good quality applewood smoked bacon)
  • 4 cups corn kernels
  • Coarse salt and ground black pepper
  • Pinch of red-pepper flakes
  • 2 to 3 scallions, (green onions) sliced

Instructions

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 to 6 minutes.
  • Add corn kernels; season with salt, pepper, and a pinch of crushed red pepper. Cook, stirring often, until corn is tender, 5 to 8 minutes.
  • Stir in scallions. Serve immediately.

Most of us are used to grilling or boiling it though and I’ve created a simple salad with robust flavors to accompany this amazing top sirloin baseball beef steak from Thatcher Farm. We carry a variety of their products at the market and you’ll love the different choices of sausages available as well!

Adding a little lime and jalapeno to this salad gives it just the right kick and I love that once you’ve grilled the corn, you can put it together as you cook the steak.

Ingredients

  • 3 ears corn, husked
  • 3 green onions, diced, include green portion
  • 1 stalk celery, diced
  • 1 cup tomatoes, chopped
  • 1/2 jalapeno pepper, chopped finely. (use less if you don't like it spicy)
  • juice and zest of one lime
  • 1 cup fresh cilantro, chopped I have used both basil and cilantro
  • salt and pepper to taste

Instructions

  • Place corn on the grill on medium high and turn until charred on all sides. About 10 minutes. Remove.

  • While corn is grilling, combine remaining ingredients.
  • Cut kernels of corn from cobs and add to combined ingredients. Season with salt and pepper and serve.

Notes

For Grilled Top Sirloin Baseball Beef Steaks

  1. Preheat grill with large cast-iron pan placed on one side. Meanwhile, pat steak dry and generously season with salt and pepper.
  2. When skillet is hot and almost smoking, place butter in the skillet and add steaks; cook steaks, basting in melted butter 4 to 5 minutes per side. Transfer steak to a plate and loosely cover with foil; let rest for 10 minutes. 
Note:  The baseball cut is thicker than most (which makes it juicier and even more delicious) .  I cooked it medium rare and if you want it cooked longer, be careful not to burn.

All of the produce used in this dish came from Barrie Hill Farms.  They even had huge basil plants that I pounced on and now I’m in the process of concocting a fun new pesto recipe.

The simple dressing of olive oil and red wine vinegar enhances the flavours and you know I love a potato salad without that dreaded mayo!

Spicy, Garlic-Braised Kale, Carrot and Corn Medley

This little spicy jumble of goodness might appeal to those with an adventurous palate. You can prep everything ahead of time and throw it together in 10 minutes. I added some jalapeno, red peppers and some fun things like ginger and maple syrup. I even added a wee bit of soy sauce, sesame oil and sherry at the end for that lip smacking flavor. Sounds a little wacky, doesn’t it? It might be but it’s deliciously wacky!

You can leave out the jalapeno if the kids don’t like it spicy. This dish is so full of important nutrients for your little guys that you’ll want to include it in your regular meal rotation especially because it takes no time at all. Best of all when you’re in a rush, you could skip the chopping and just use frozen veggies. Keeping a good supply of frozen veggies on hand is a life saver for busy weeknights.

Spicy, Garlic-Braised Kale, Carrot and Corn Medley

  • 1 tbsp dry sherry
  • 1 tsp reduced sodium soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp pure maple syrup
  • pinch of sea salt
  • tbsp extra virgin olive oil
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 1 tsp minced fresh jalapeno pepper
  • 1.5 cups carrots, thinly sliced
  • 1 red bell pepper, cut into strips, halved
  • 1.5 cups corn, fresh or frozen
  • 2 cups fresh kale, cut spine from each leaf, chopped

Instructions

  • Heat oil in large skillet or wok on medium-high heat and add ginger, garlic and jalapeno. Saute for 1 minute. Add carrot and cook for 2 minutes. Add bell pepper and corn, maple syrup and salt cooking for an additional 2 minutes. Add kale and cook for approximately 45 seconds or until slightly wilted, drizzling in sherry, soy sauce and sesame oil. Serve immediately.

Ingredients

  • 2 large zucchini, washed, cut into ribbons with vegetable peeler
  • 1 corn with husk
  • 12-15 medium-large shrimp, washed, peeled and deveined
  • 2-3 tbsp red bell pepper, diced
  • 2 cups cherry or grape tomatoes, halved
  • handful of fresh basil
  • Citrus-Ginger Vinaigrette
  • 1/2 cup orange juice
  • Juice of one lime
  • 1 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, crushed
  • 1 tsp ginger, minced
  • pinch of red pepper flakes
  • sea salt and freshly cracked black pepper to taste

Instructions

  • Preheat oven to 350 F and trim ends of corn, leaving husk on but removing loose pieces. Place corn on baking tray and roast for 30 minutes. Remove and let cool.
  • Drizzle shrimp with extra virgin olive oil, salt and pepper.
  • Turn oven up to 450 and place shrimp on baking sheet. Roasting for 8 minutes. Remove.
  • While corn is roasting, combine zucchini ribbons, red pepper, tomatoes and basil.
  • Cut corn from cob and add to salad along with shrimp.
  • For Dressing – combine ingredients and mix well. Drizzle over salad, mix well and serve immediately.

I wanted to do a little something different taste-wise this time around and change up my cooking method as well. I usually soak the corn in milk for 30 minutes or so before boiling it but that just seems so boring sometimes. I love it on the grill but starting up the grill for just one thing is sometimes a pain and other times the grill is too crowded with fish and chicken and veggies.

Enter the oven method! Have you ever tried this before? This was my first time and it sure won’t be my last.

I cleaned it up a little by cutting the end off and removing a few loose strips. I just wanted to ensure that the silken ends didn’t flame up. Put them directly on the rack at 350 F for 30 minutes and they’re done. Super simple, super delicious.

Corn roasting method

The great thing about this method is that you can peel back the husks so easily and the silk goes with it – no mess! Do be careful about the steam though – they’ll be very hot.

Ingredients

  • 6 Fresh ears of corn, unpeeled and in husks.
  • 1/2 cup butter, softened
  • 1 lime
  • 2 tbsp fresh cilantro or parsley, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/2 tsp freshly ground pepper

Instructions

  • Place rack in center position of oven. Preheat oven to 350°F.
  • Cut off any silk hanging out the ends. Trim any tips of leaves extending from sides. Do not peel.
  • Place ears of corn directly on oven rack. Cook for 30 minutes.
  • Remove corn from oven. Let cool for a few minutes before peeling back the husks. It’s hot so be careful!

SMOKY LIME BUTTER

  • Combine butter, zest from half the lime, and juice of whole lime. Stir in cilantro, salt, smoked paprika, and pepper. Transfer butter mixture to a serving bowl.

Sweet Corn Soup

Sweet corn soup is the kind of dish you can have year round but the best part of summer is the deliciously sweet corn from the farmers' markets and when you use it in this dish, you'll be thinking of the second bowl before you're even half-way through the first
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Course: Soup
Cuisine: American

Ingredients

  • 1 ear of corn
  • 1 small yellow onion, chopped
  • 1/2 cup coconut aminos
  • 1 clove garlic, minced
  • 2 celery stalks, diced
  • 1 small parsnip, peeled and sliced
  • 3 tbsp nutritional yeast
  • 2 cups coconut milk
  • Reserved kernels from soup
  • 2 scallions, chopped
  • freshly ground black pepper

Instructions

  • Scrape the kernels from the corncob, set aside about 3 tablespoons, and add the rest to a large pot over medium heat. Add the onion and stir until fragrant, about 1 minute.
  • Add the coconut aminos, garlic, celery, parsnip, and nutritional yeast and cook, stirring occasionally, until the garlic is fragrant and the vegetables are slightly tender, about 2 minutes.
  • Add the coconut milk and bring to a boil.
  • Lower the heat, cover the pot, and let the soup simmer until the vegetables are fork tender, about 20 minutes.
  • Transfer the soup in batches to a high-speed blender and puree until smooth. You can also use an immersion blender.
  • o make the topping: Toast the reserved corn kernels in a skillet over medium heat for about 2 minutes.
  • Serve the soup immediately, topped with the toasted corn kernels, scallion, and a grind of black pepper.

Sweet Corn Salsa

Sweet Corn Salsa is that delicious combination of sweet and spicy that is always a hit at summer get togethers.  Roasting freshly picked corn from the farm takes this dish to an over the top flavorfest!

I roasted the corn in a cast iron frying pan for about 10 minutes, turning as it cooked.  You can also toss it on your grill but to be honest, I just didn’t want to go outside in this  heatwave we’re having!

Fun Fact:  For every kernel of corn on a cob there is 1 strand of silk!

There are crazy big plants of basil at the farms so I decided to use it instead of cilantro and it’s a natural!  If you’d prefer cilantro though, go for it!

Creating salsas from freshly grown ingredients is one of my favorite things to do.  I have a rhubarb salsa that you would love too!

These tortilla chips came from the farm and are made from asparagus.  There are so many healthy alternatives now so we don’t have to ruin our healthy snack with sodium and calorie laden junk food.  I’m making up a healthy substitutions list so if you have some brand names to share, I’d love to hear about them.  That goes for all foods – sauces, chips, pasta, you name it.  I have been working on this list for awhile now so will share it soon!

Ingredients

  • 2 cobs of corn
  • 2 tomatoes, diced
  • 2 green onions, chopped

  • juice of one lime
  • salt and pepper to taste

Instructions

  • Brush corn lightly in olive oil and season with salt. Heat cast iron fry pan on medium and sauté corn until kernels begin to char. (You can also grill the corn if you prefer) Set aside to cool.
  • In a medium bowl, combine tomatoes, onions, yellow or orange pepper, jalapeno, cilantro/basil, lime juice, and salt and pepper. . Add sautéed corn and stir to combine. Serve with tortilla chips.
