An easy, colorful and elegant salmon dinner with a wonderful combination of sweet and spicy that will have your taste buds tingling. Who knew strawberries and salmon were so amazing together!

Sweet Hot Coriander Salmon with Strawberry Tomato Salad

I’ve created a simple rub for the fish and the salad is a matter of chopping and tossing. It doesn’t get much easier really.

The ingredients are a little quirky but when I saw a recipe online for coriander roasted strawberries I knew this would work with my favorite fish as well. I’m here to testify that they are a fantastic combination and I loved it!

Sweet Hot Coriander Salmon with Strawberry Tomato Salad

This method of cooking is going to give you melt-in-your mouth deliciousness. You’ll want to use a good pan, preferably cast-iron. I have regular cast iron as well as enamel-coated cast iron pans that I use for almost everything. You’re going to sear it briefly on high heat then pop it into the oven for a few minutes and presto – dinner is served!

Ingredients

SALMON

  • 2 tbsp extra virgin olive oil
  • 4 5 ounce pieces of wild salmon
  • 1.5 tsp coriander
  • 1.5 tsp brown sugar
  • 1.5 tsp chili powder
  • 1.5 tsp Sriracha sauce
  • sea salt

STRAWBERRY TOMATO SALAD (from Southern Living)

  • 1 1/2 cups fresh strawberries, chopped
  • 1/2 pound assorted small heirloom, cherry and grape tomatoes, halved
  • 1/3 cup chopped fresh basil
  • 1 tbsp chopped fresh oregano
  • 1 tsp loosely packed lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions

SALMON

  • Preheat oven to 400F
  • Combine coriander, brown sugar, chili powder, Sriracha sauce in a small bowl. Season with salt. Pat salmon dry and rub mixture into both sides of fish, including skin. Let sit for 15 minutes. In the meantime make the salad.
  • Heat 2 tablespoons olive oil in large non-stick ovenproof skillet over medium-high heat until nearly smoking. Sear salmon fillets skin-side up 2 minutes. Flip, then transfer skillet to oven and cook 7-10 minutes more or until salmon is just cooked through. (depending on thickness) Be careful not to overcook. Mine took 7 minutes and my oven tends to run hot.
  • Good salmon is expensive so if unsure, use a thermometer. It makes life so much easier!

SALAD

  • Combine all ingredients and serve in bowl or arrange on platter leaving room in center for salmon. Make this first because the salmon is going to require your attention.

Chilled Strawberry Soup

Makes 4-6 servings

Ingredients 

4 cups fresh Barrie Hill Farms strawberries          1 tbsp sugar

1 cup cranberry juice                                              1 tbsp finely chopped fresh mint

1 cup water                                                             juice of 1 lemon

1 cup low-fat yogurt

 

Slice six strawberries for garnish and set aside.

In a large bowl, combine remaining strawberries, cranberry juice, water, yogurt, sugar, mint, and lemon juice.

Puree the mixture in the bowl using an immersion blender or food processor and blend until smooth, then return to the bowl. Cover, and refrigerate at least 1 hour before serving.

Serve garnished with strawberry slices.

Quick Strawberry Jam (Refined Sugar Free)

Ingredients

  • 1 quart strawberries, washed and hulled
  • 1/4 cup honey (raw if you have it) or maple syrup
  • 2 tablespoons fresh lemon juice

Instructions

  • Place strawberries in your food processor and process until strawberries are coarsely chopped. Don’t overdo it! You don’t want mushy jam.

  • Place contents in large saucepan on medium-high heat and add honey and lemon juice, stirring well.

  • Cook for 8-10 minutes at a low boil. Remove from heat and transfer to a heat proof jar and let cool at room temperature before sealing and storing in the refrigerator up to 2 weeks or 2 months in your freezer.

  • Place the salmon, skin-side-down, on the grill and cover. Cook, undisturbed, until the salmon just starts to release its fat (opaque mayonnaise-like stuff) and/or the flesh flakes easily, 10 to 15 minutes for most 1 inch thick fillets. Allow another 10 minutes for each extra inch of thickness.

  • Good salmon is expensive so if unsure, use a thermometer. It makes life so much easier!

  • SALAD

Ingredients

Cake

  • 8 ounces softened butter
  • 1 3/4 cups sugar
  • 5 large egg whites
  • 2 tsp strawberry extract (or vanilla if you don’t have strawberry)
  • 2 cups puréed fresh strawberries
  • 1/2 cup softened sour cream
  • 3 cups cake flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Strawberry Cream Cheese Frosting

  • 2 ounces softened butter
  • 8 ounces softened cream cheese
  • 1/4 cup puréed fresh strawberries
  • 1/2 tsp strawberry extract (or vanilla)
  • 6 1/2 cups confectioners’ sugar

Instructions

  • To make the cake:Heat oven to 350 degrees. Grease and flour three 9-inch cake pans and set aside. In a large mixing bowl, beat sugar and butter at medium speed with an electric mixer until fluffy. Add strawberry extract, puréed strawberries, and sour cream. Beat until combined.
  • In a medium mixing bowl, sift together flour, baking powder, soda, and salt. Gradually add to butter mixture, beating until combined.
  • In a clean, medium bowl, beat egg whites until stiff peaks form. Gently fold into batter. Pour batter evenly into prepared pans.
  • Bake for 35-40 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes then turn out onto wire racks. Cool completely.
  • To make the frosting: In a large bowl, beat butter and cream cheese with an electric mixer at medium speed until smooth. Add puréed strawberries and strawberry extract beating until combined. Gradually beat in confectioners’ sugar until smooth.
  • Spread frosting between cake layers and on the top and sides. Refrigerate until ready to serve. Garnish with fresh sliced strawberries, homemade vanilla ice cream, strawberry sauce and a sprig of mint, if desired.

This Strawberry Rhubarb Compote is so delicious! It was an experiment that I was a little leery about because I started out with the intention of making a simple rhubarb compote but wanted to avoid adding a lot of sugar. Yummy strawberries….and then the maple syrup…and then freshly squeezed orange juice. Result – DELISH and HEALTHY! Skip the refined sugar.

Best of all, this yummy little sauce is ready to eat in 10 minutes. You can use this on yogurt, oatmeal, ice cream, cake, trifle or go all out and make a rhubarb bellini! I think this would be great as a sorbet as well – just freeze it. Then combine this with ginger-snap cookies? Whoa – now we’re getting crazy!

This dish is as simple as roasting the chicken breasts – feel free to use thighs if you prefer – with a little balsamic vinegar, salt and pepper. While it’s cooking, wash and cut your strawberries and combine them with basil and feta cheese. Goat cheese would be a nice option here. Top your chicken with the strawberry mixture and drizzle with a little more balsamic vinegar and you’ve got dinner.

  • 1 cup balsamic vinegar
  • kosher salt

  • Top chicken with strawberry mixture and drizzle with remaining balsamic vinegar. Serve

A  simple, healthy, vegetarian dessert. I thought about the flavors I love with berries and this yummy syrup was born. Topping it with whipped coconut milk is the best!

This is super simple. Combine your honey (raw if you have it) and lemon juice and mix them with your berries for 20 minutes or so. Add a few beautiful basil leaves and you’re done.

Ingredients

  • 6 cups of mixed berries (raspberries, blueberries, strawberries, blackberries)
  • ½ tsp cinnamon
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • zest of ½ lemon and juice
  • ¼ cup tapioca

Topping

  • ½ cup walnuts
  • 1 cup almond meal
  • ¼ cup tapioca
  • ¼ maple syrup
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • ¼ cup butter, slightly softened
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350 F. Spray your baking dish or individual ramekins
  • Clean and cut your strawberries. Add all ingredients to bowl except tapioca and mix very gently. Sprinkle tapioca over mixture and mix gently again. Pour mixture into baking dish or individual ramekins.

Topping

  • Mix all ingredients in a large bowl and combine. Use fork to mix in butter well.
  • Sprinkle topping over the berry mixture, covering completely. Bake for 35-40 minutes until bubbly. (If you’ve filled it to the brim, place your baking dishes on a baking sheet to avoid spillage in your oven)
  • Let cool for 10 minutes and serve with whipped coconut milk.

Strawberry Topping (Sugar Free)

This Sugar Free Strawberry Sauce is made with pure maple syrup and a squeeze of lemon - the perfect complement to these hand picked, amazingly sweet berries!

Ingredients

  • 1 lb strawberries, hulled and sliced thickly
  • 1/3 cup pure maple syrup (more if you desire a saucier consistency)
  • 1/2 lemon

Instructions

  • In a medium saucepan, combine sliced strawberries, 1/3 cup maple syrup and freshly squeezed juice from 1/2 lemon. On medium heat, bring the mixture to a boil, stirring occasionally. 
  • Reduce heat and simmer 15 minutes or until sauce is thickened. Remove from heat and cool to room temperature. 
  • The sauce will thicken up as it cools and if you are storing it in the refrigerator, it will thicken even more so be careful to get the consistency you want.
