Baked Salmon with Easy Pasta Salad is a colorful, healthy dish that is so easy the kids can help make it for a special Day dinner! Salmon is always a popular choice and combining it with just a few flavorful ingredients will have your mom doing the happy dance all the way to the dinner table!

Baked Salmon with Easy Pasta Salad

This delicious recipe can be made in twenty minutes. When you include roasted salmon in any dish it goes from every day to elegant in no time. The key here is your fresh herbs of parsley, dill and basil. You want a nice quality olive oil as well to enhance the flavors to the max.

Baked Salmon and Easy Pasta Salad

Course: Salad

Ingredients

  • 44 ounce (113g) boneless salmon fillets
  • 1 box 8 ounces (227g) Chickapea Pasta shells
  • 2 cloves garlic, sliced
  • 11/2 cups (223g) grapes tomatoes, halved
  • 11/2 cups (223g) zucchini, sliced thinly
  • 2 spring onions, chopped. Use all of it.
  • 2 lemons, for juice and garnish
  • handful parsley, dill and basil
  • 2 tbsp (30mL) freshly squeezed lemon juice
  • 2 tbsp (30mL) extra virgin olive oil
  • kosher salt and freshly ground black pepper
  • 1 cup (150g) feta or goat cheese for topping

Instructions

  • Preheat oven to 400 F.
  • Place salmon on parchment paper on baking sheet. Salt and pepper to taste and drizzle with extra virgin olive oil. Let sit for a few minutes while you prepare the salad.
  • Cook pasta according to directions, drain and rinse.
  • In a large bowl, add, garlic, grape tomatoes, zucchini, spring onions, basil and parsley.
  • In a small bowl, combine dressing ingredients and mix well. Add to vegetables and toss lightly.
  • Place baking sheet with salmon in oven for 8-10 minutes depending on thickness of fillets.
  • Prepare each plate with a serving of salad and top with salmon a slice of lemon, fresh dill and remaining parsley and basil.

BLT Chickpea Pasta Salad

Course: Salad

Ingredients

  • 1 box (227 g, ½ lb) Chickapea pasta spirals
  • 1/2 pound (226 g) bacon cooked and crumbled
  • 2 cups (400 g) cherry or grape tomatoes, halved
  • 1/4 cup (5 g) chopped herbs (basil, parsley, chives)
  • 1/4 cup (5 g) baby arugula, thick stem discarded
  • Small red onion, sliced

DRESSING

  • 1 cup (240 mL) apple cider vinegar
  • 1 ¼ cup (300 mL) extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tbsp (6.3g) basil, chopped
  • 1 tsp (2,6 g) Dijon mustard
  • ½ tsp (1,3 g) freshly ground pepper
  • ¼ tsp teaspoon (0.65) kosher salt
  • 1 tsp (2.6 g) honey

Instructions

Dressing

  • Combine all ingredients in a blender and blend well till smooth. This will make about 2 ¼ cups and will keep up to 1 month. You need only 1 cup for the recipe.  

Salad

  • Cook pasta according to directions. Drain and add dressing; tossing well to combine. Let cool.
  • Meanwhile cook bacon according to your taste. I like it just before it’s crispy! Cut into bite size pieces.
  • Add bacon, tomatoes, herbs, arugula and onion to the pasta and toss. Add more vinaigrette at this point if desired.

Sweet Hot Coriander Salmon with Strawberry Tomato Salad

I’ve created a simple rub for the fish and the salad is a matter of chopping and tossing. It doesn’t get much easier really.

The ingredients are a little quirky but when I saw a recipe online for coriander roasted strawberries I knew this would work with my favorite fish as well. I’m here to testify that they are a fantastic combination and I loved it!

Sweet Hot Coriander Salmon with Strawberry Tomato Salad

This method of cooking is going to give you melt-in-your mouth deliciousness. You’ll want to use a good pan, preferably cast-iron. I have regular cast iron as well as enamel-coated cast iron pans that I use for almost everything. You’re going to sear it briefly on high heat then pop it into the oven for a few minutes and presto – dinner is served!

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Course: Salad

Ingredients

SALMON

  • 2 tbsp extra virgin olive oil
  • 4 5 ounce pieces of wild salmon
  • 1.5 tsp coriander
  • 1.5 tsp brown sugar
  • 1.5 tsp chili powder
  • 1.5 tsp Sriracha sauce
  • sea salt

STRAWBERRY TOMATO SALAD (from Southern Living)

  • 1 1/2 cups fresh strawberries, chopped
  • 1/2 pound assorted small heirloom, cherry and grape tomatoes, halved
  • 1/3 cup chopped fresh basil
  • 1 tbsp chopped fresh oregano
  • 1 tsp loosely packed lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions

SALMON

  • Preheat oven to 400F
  • Combine coriander, brown sugar, chili powder, Sriracha sauce in a small bowl. Season with salt. Pat salmon dry and rub mixture into both sides of fish, including skin. Let sit for 15 minutes. In the meantime make the salad.
  • Heat 2 tablespoons olive oil in large non-stick ovenproof skillet over medium-high heat until nearly smoking. Sear salmon fillets skin-side up 2 minutes. Flip, then transfer skillet to oven and cook 7-10 minutes more or until salmon is just cooked through. (depending on thickness) Be careful not to overcook. Mine took 7 minutes and my oven tends to run hot.
  • Good salmon is expensive so if unsure, use a thermometer. It makes life so much easier!

SALAD

  • Combine all ingredients and serve in bowl or arrange on platter leaving room in center for salmon. Make this first because the salmon is going to require your attention.

I packed this colorful little salad with mango, avocado, lime, tomatoes, shrimp and a variety of peppers and fresh herbs. That’s a lot of flavor!

If you’re treating your family to this salad on a picnic, pack your dressing and salad separately. You can also pack some raw shrimp separately and cook it on the grill at your location if you prefer. If the kids don’t like too much spice, leave out the cayenne pepper and red pepper flakes.

Thai-Lime Pasta Salad with Shrimp

Prep Time: 25 minutes
Cook Time: 10 minutes

Ingredients

  • 8 ounces quinoa pasta or whole wheat pasta, fusili

Dressing

  • ½ cup lime juice
  • ½ cup Thai basil leaves, chopped
  • 4 tbsp extra virgin olive oil
  • 1.5 tbsp raw honey
  • 1 tsp of garlic, minced
  • Pinch of cayenne pepper
  • Pinch of red pepper flakes

Salad

  • 1 pound of pre-cooked small shrimp, rinsed and patted dry
  • 2 shallots, thinly sliced
  • ½ red sweet pepper, seeded and diced
  • ½ orange sweet pepper, seeded and diced
  • 1 Thai chile pepper, seeded and diced
  • ½ jalapeno pepper, seeded and diced
  • 2 cups grape tomatoes, halved
  • 1 mango, cut into bite sized pieces
  • 1 avocado, cut into bite sized pieces
  • 2 limes, cut into wedges
  • a handful of fresh basil leaves

Instructions

  • Cook pasta according to directions, drain, rinse with cold water and set aside.
  • Combine dressing ingredients and mix well.
  • In large bowl combine shrimp, shallots, peppers, tomatoes, mango and avocado. Add 2 lime wedges to each dish. Top with fresh basil. Serve.

NOTES:

  • Rotini pasta is the best kind for this salad as it absorbs the dressing well.
  • If you’re taking this recipe to a picnic, pack the shrimp separately on ice and add when serving,
  • Pack dressing separately as well and combine with salad just before serving.

So much beautiful produce in the fields to pick right now!  Blueberries, raspberries, corn, peas, and soon there will be fall raspberries and much more!

By the time we get home, the peas are seriously depleted because no one can resist snacking on these beauties.  That’s the great thing about these peas – they are delicious raw, steamed, boiled or even toss them in a basket on the grill.

  • 2 cups sugar snap peas, trimmed

Blueberry Avocado Sala

This fruity Blueberry Avocado Salsa is a refreshing snack or a delightful side to grilled meat and fish recipes.  You can spice it up with some jalapeno or add more sweetness by doubling the strawberries.  Either way, it’s going to make your meal!

Ingredients

  • 1 cup fresh blueberries
  • 5 medium strawberries, hulled, chopped into chunks
  • 1/4 red onion, diced
  • 1 teaspoon lime zest
  • zest of two limes
  • 1/2 cup avocado, chopped
  • salt and pepper to taste

Instructions

  • Combine blueberries, strawberries, onion, lime zest, juice and cilantro in a food processor or blender and pulse. For a chunky salsa, pulse 6-7 times. If you like it creamy, 10-12 times.

  • Season with salt and pepper and pour into serving bowl. Add avocado and mix. Serve immediately.

Notes

Recipe can easily be doubled.
If you want some heat, add some jalapeno pepper.  Sweet and spicy is awesome!

  • SALMON
  • 2 tbsp extra virgin olive oil

  • 1.5 teaspoons brown sugar
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons Sriracha sauce
  • pinch of sea salt
  • STRAWBERRY SALAD
  • 1,5 cups fresh strawberries, hulled and chopped in half
  • 1/2 pound assorted small heirloom, cherry and grape tomatoes, halved
  • 1/3 cup fresh basil, chopped
  • 1 tbsp fresh oregano, chopped
  • 1 teaspoon loosely packed lemon zest
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

  • SALMON

  • Good salmon is expensive so if unsure, use a thermometer. It makes life so much easier!

  • SALAD
  • Combine all ingredients and serve in bowl or arrange on platter leaving room in center for salmon. Make this first because the salmon is going to require your attention.

  • 3/4 cup fresh or frozen peas
  • 3 radishes, washed, trimmed and sliced thinly
  • 1 cup shredded radicchio
  • 2 spring onions, chopped, both white and green parts
  • 1/2 cup basil, julienned
  • handful of chopped cilantro and parsley
  • DRESSING
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red pepper flakes
  • salt and pepper to taste

Instructions

  • Cook rice according to directions.  Two minutes before rice done, add asparagus and peas.  Set aside. Cool slightly.
  • Combine dressing ingredients and toss with cooled rice, asparagus and peas.
  • Add radicchio, radishes, spring onions and fresh herbs.  Toss and serve.

Notes

Cooking time will depend on the type of wild rice you buy.  There are some great wild rice blends that cook up in less than 30 minutes.

Heirloom Tomato Salad with Roasted Lemon and Garlic

While I was cutting up the shallots and tomatoes, I roasted some lemon and garlic and simply added them at the end. The salad dressing consists of just extra virgin olive oil, balsamic vinegar and yes, more pepper! I brushed them with a little olive oil and honey hoping that it would result in an interesting taste. Not so much! You know that limes are powerful.

Well, roasting them makes them twice as powerful and…. inedible!  I should have figured that out when I googled ‘roasted limes’ and there wasn’t a single entry. Live and learn, ha! It was an interesting experiment and that’s what cooking is all about!

You can use any type of tomato you like in this dish and it’s a great way to enjoy the local produce right now.

Ingredients

  • 1 lemon, sliced thinly
  • 1/2 tsp honey
  • 1 tbsp extra virgin olive oil
  • 5-6 cloves of garlic, peeled
  • 2 pints mixed cherry heirloom tomatoes, halved
  • 1 shallot, sliced thinly
  • a handful of fresh basil
  • 3-4 spears chives, chopped
  • small handful of cilantro (optional), chopped

Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • freshly ground pepper

Instructions

  • Preheat oven to 350 F
  • Place lemon slices and garlic cloves on baking sheet. Mix olive oil and honey in small bowl and brush on to lemon slices. Roast for 20 – 25 minutes.
  • Mix dressing ingredients
  • Combine shallots, tomatoes and herbs. Add lemon slices and garlic when done. Drizzle dressing over salad and toss very gently. Serve immediately.

I keep a jar of marinated artichokes in the pantry because I love munching on them. A 1/2 cup serving of marinated artichokes contains 110 calories. One serving of marinated artichokes contributes 5 grams of carbohydrates, including 2 grams of dietary fiber. It is also a great source of Vitamin C which is so important for your immune system.

You really do need your fresh parsley in this recipe otherwise you’ll be disappointed in the taste. This is not me nagging this time – this is vital to the recipe, ha! Cheers!

Ingredients

  • 6 Roma tomatoes, cut lengthwise and then quartered
  • kosher salt and freshly cracked black pepper
  • 14 ounces marinated artichokes, drained and chopped
  • 6 ounces small jar of sliced black olives
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white balsamic vinegar
  • 3 garlic cloves, minced (maybe 2 if you’re not a fan of garlic)
  • small handful of fresh parsley

Instructions

  • Place cut tomatoes on serving platter. Salt and pepper to taste.
  • Combine artichokes, olives, parsley, olive oil, balsamic vinegar and garlic, mixing well. Spoon on to tomatoes and top with additional fresh parsley.
