It’s blueberry season and we’re loving all the happy faces in the field! The berries are particularly juicy and plentiful this year and this made us think of an easy sauce recipe to make the most of it.

Keeping It Simple

  1. Keeping the ingredient list simple is important to maintain this amazing flavor.
  2. Adding honey and chia seeds adds just the right texture for a sauce that can be used on ice cream, yogurt, chicken, beef and fish.

It would be possible to make jam with these ingredients as well. Simply lessen the amount of cooking time and don’t mash while cooking. Don’t you love a versatile recipe?!

Ingredients

  • 1 1/2 lbs fresh blueberries
  • 1/4 cup honey
  • 2 tbsp chia seeds

Instructions

  • Heat a medium saucepan over medium heat and add the blueberries. Add the honey and place on the stove over medium heat.

  • As the blueberries begin to soften slightly over the heat, stir them around in their juices and the honey. Use a potato masher or fork to assist in breaking them down.

  • Once the berries have softened to the point that they're starting to fall apart, add the chia seeds and stir them in well. Stir until saucy and achieves the thickness you desire.

Ingredients

  • 1 cup fresh blueberries
  • 5 medium strawberries, hulled, chopped into chunks
  • 1/4 red onion, diced
  • 1 teaspoon lime zest
  • zest of two limes
  • 1/2 cup avocado, chopped
  • salt and pepper to taste

Instructions

  • Combine blueberries, strawberries, onion, lime zest, juice and cilantro in a food processor or blender and pulse. For a chunky salsa, pulse 6-7 times. If you like it creamy, 10-12 times.

  • Season with salt and pepper and pour into serving bowl. Add avocado and mix. Serve immediately.

Notes

Recipe can easily be doubled.
If you want some heat, add some jalapeno pepper.  Sweet and spicy is awesome!

Blueberry Maple Bread Pudding

It’s time for Blueberry Maple Bread Pudding!  You can do a delicious bread pudding without guilt and it’s quick and simple too!

When was the last time you had bread pudding? I know, right!  In our family, we always talk about the delicious bread pudding my grandfather used to make. On the other hand, I’m always bookmarking the good looking ones I come across online but I never ever get around to making them.

Bread pudding doesn’t have to be unhealthy and if you substitute maple syrup for sugar, your result is an even more delicious flavour. I picked these fresh blueberries from Barrie Hill Farms.

This dish couldn’t be any easier. Simply combine your ingredients, whisk well and pour over your bread pieces. If you can let it sit in the fridge overnight – perfect.  If you don’t have the time, however, a couple hours will do. A little time in the oven, add some more fresh blueberries and almonds and you’ve got yourself breakfast, brunch or a delicious snack. I’ve included the option of adding a little lemon or orange zest if you like as well.

Cook Time: 50 minutes
Total Time: 1 hour

Ingredients

  • 3/4 loaf of your favourite bread (challah, brioche works well)
  • 4 eggs
  • 2 1/4 cups whole milk
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • pinch of nutmeg
  • 1 1/2 cups blueberries, washed
  • zest from 1/2 lemon or orange (optional)
  • If you’d like a little something extra, add some peaches as well.

Instructions

  • Cut pieces of bread into 1 inch cubes and place into a 9 inch baking dish.
  • Whisk together the remaining ingredients except for 1/4 cup of blueberries. Pour the mixture carefully over the bread letting it soak in well. Add the remaining fresh berries on top.
  • Cover pan in plastic wrap and set in fridge for 2 hours to 24 hours.
  • Preheat oven to 350 F and replace the plastic with foil. Bake covered for 20 minutes. Remove foil and bake an additional 30 minutes until puffy and golden.
  • Remove and let rest for 5 minutes. Top with slivered almonds, a drizzle of maple syrup and serve.

Ok, on to the dessert – these pictures were taken on the fly because my friend, Paula and I were both so busy chatting that I forgot about taking more pics but these will give you a good look at her super delicious treat. This was the first taste test of her experiment and we were both delighted with the results.

Paula used Barrie Hill Farms frozen blueberries for this recipe and we both agreed that they are amazing. When you open up that package, the wonderful aroma of fresh berries greets you and you feel as though you’ve picked them that morning.  Fabulous!

Barrie Hill Lemon Blueberry Cashew Cake on a dish

Barrie Hill Lemon Blueberry Cashew Cake

Ingredients

Crust

  • 1 cup pitted dates
  • 1 cup raw almonds

Filling

  • 1.5 cups raw cashews
  • 2 large lemons
  • 1/4 cup honey or maple syrup
  • 1/2 can coconut milk (add a little more if you want it thick)

Topping

  • 1 600 gram bag of Barrie Hill Farms Frozen blueberries or fresh if available.
  • 2.5 cups blueberries
  • 1/4 cup maple syrup

Instructions

Crust

  • Soak dates in warm water for 10 minutes, then drain
  • Process nuts into a meal using food processor. Set aside.
  • Process dates until small bits remain and it forms into a bal. Add nuts back into processor and blend until a loose dough forms. It should stick together when you squeeze a bit between you fingers.Too dry? Add more dates. Too wet? Add more almonds.
  • Line a small baking dish with parchment paper and pack down the crust using your fingers. Place in freezer and let set.

Filling

  • Soak in water 4-6 hours then drain. (note…to speed this process up, pour boiling hot water over cashews and soak for one hour).
  • Juice and zest lemons. Place all filling ingredients into food processor and blend till smooth. For coconut milk, be sure to use the ‘cream’ part first as this makes the filling richer tasting then add the liquid after.
  • Taste mixture to ensure it has a good lemony flavour. Add more lemon juice and zest if needed.
  • Once mixture is to your liking, pour it into the cake pan, layering it over the crust evenly.

Topping

  • Place all topping ingredients into a fry pan and sauté till blueberries soften Pour blueberry mixture over cashew cake and serve.
  • Garnish on the side with additional fruit if desired.

Ingredients

  • 6 cups of mixed berries (raspberries, blueberries, strawberries, blackberries)
  • ½ tsp cinnamon
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • zest of ½ lemon and juice
  • ¼ cup tapioca

Topping

  • ½ cup walnuts
  • 1 cup almond meal
  • ¼ cup tapioca
  • ¼ maple syrup
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • ¼ cup butter, slightly softened
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350 F. Spray your baking dish or individual ramekins
  • Clean and cut your strawberries. Add all ingredients to bowl except tapioca and mix very gently. Sprinkle tapioca over mixture and mix gently again. Pour mixture into baking dish or individual ramekins.

Topping

  • Mix all ingredients in a large bowl and combine. Use fork to mix in butter well.
  • Sprinkle topping over the berry mixture, covering completely. Bake for 35-40 minutes until bubbly. (If you’ve filled it to the brim, place your baking dishes on a baking sheet to avoid spillage in your oven)
  • Let cool for 10 minutes and serve with whipped coconut milk.

Balsamic Blueberry Steak Crostinis

Balsamic Blueberry Steak Crostinis are the ultimate sweet and savory delight.  Caution though – these easy appetizers are very addictive!

They are messy and sloppy and you’ll want to rip into them so be sure you’re serving them to friends and not the boss or someone you want to impress.  But oh man, are they delicious!

You can do this with any type of steak and it doesn’t have to be spiced with peppercorn but it certainly adds that extra bite.  Likewise with the greens – I used spinach leaves but feel free to use anything you have handy.   Arugula would be a scrumptious substitute.

Peppercorn Steak Crostini with Blueberry Balsamic Sauce | Simply Fresh Dinners

  • A one cup serving of blueberries – about a handful – contains just 80 calories, but a whopping 25 percent of your recommended daily allowance of Vitamin C and 4 grams of fiber.

  • Promotes heart health. Eating blueberries has been linked to reducing high blood pressure. It also reduces the stiffness in arterial walls, allowing the blood to flow more smoothly through your body.

Peppercorn Steak Crostini with Blueberry Balsamic Sauce | Simply Fresh Dinners

I added some fresh herbs to the goat cheese and whipped it to give it some fluffiness.  The blueberry/balsamic sauce came together in 4 minutes with a simple addition of maple syrup.

Some fresh chives on top with a few pea tendrils strewn about make for an attractive presentation, don’t you think?  Along with the herbs, the blueberries are fresh picked from Barrie Hill Farms and were beyond delicious.  I’m smacking my lips again just thinking about the taste!

Another bonus about making these delectable little bites is that you can convince the grill master in your family to help out.  The more, the merrier – right?

I’ve been told by American friends and family that we have too many long weekends in the summer.  Is that really possible?!  Americans need to lobby for that extra August holiday – we celebrate summer on the first long weekend of each August.   And I suppose it’s also a  celebration of surviving our winters, ha!  Cheers, everyone!

Balsamic Blueberry Steak Crostinis

Ingredients

  • 1 baguette, cut into bite sized pieces
  • 2 tbsp olive oil
  • 1 pound peppercorn steak, or regular steak, cut of your choice
  • 1-2 tbsp black and white peppercorns, crushed
  • 1 1/2 tbsp unsalted butter
  • 8 ounces goat cheese
  • 1 tbsp fresh chives, chopped
  • 1 clove garlic, crushed
  • handful of spinach or arugula leaves, washed and trimmed
  • 1/2 cup balsamic vinegar
  • 1 cup blueberries
  • 1/3 cup pure maple syrup
  • Additional fresh chives, chopped, for topping

Instructions

  • For peppercorn steak, rub the crushed peppercorns into the steak, pressing them lightly to ensure they stay while cooking. Melt butter in saucepan on high heat and cook approximately 2-3 minutes per side. (can be grilled as well)Steak should be medium rare for crostini. Remove from heat, tent loosely with foil and let rest while you prepare the other ingredients. Slice thinly after 10 -15 minutes.
  • Preheat oven to 350 and brush baguette piece lightly with olive oil. Place on baking sheet and toast for 5-7 minutes until golden. Remove.
  • You can slice the goat cheese or whip it. To whip put in food processor or use mixer, adding chives and garlic. Whip until fluffy. 1 – 2 minutes.
  • Combine balsamic vinegar, blueberries and maple syrup in saucepan and bring to a boil before reducing heat to low and simmer for 5 minutes. Mixture should stick lightly to spoon.
  • Assembly:
    Place one spinach leaf on each baguette piece followed by a generous dollop of goat cheese. Place one slice of steak on top of cheese, and drizzle with blueberry/balsamic sauce. Top with chopped chives.
    Serve immediately

It’s blueberry season and I love being at Barrie Hill Farms to watch everyone’s excitement to climb the wagons and get into the fields to pick.  This year the berries are as big as quarters and SO juicy!

An Easy Blueberry Pizza Recipe

I’ve included pancetta on this pizza but I’m sure it would be delicious without it as well if you’re vegetarian.  I don’t cook pancetta very often and every time I do I’m left wondering why I don’t add it to everything, ha.  I absolutely love it!

I used mini Naan because you know I’m all about quick and easy.  The kids can help with this dish and each make their own.  The base is simply honey and goat cheese combined topped with the red onion, pancetta and a little thyme.   Bake for 12 minutes and add the blueberries for another 5 minutes and lunch is served!

I will be making these often throughout the summer because I love the look of surprise on everyone’s face when they take their first bite – fabulous!

Cook Time: 15 minutes
Total Time: 25 minutes
Course: Main Course

Servings: 10 mini pizzas

Ingredients

  • 10 mini naan bread or 5 regular sized
  • 10 ounces goat cheese
  • 4 tablespoons honey
  • 12 ounces pancetta cooked and drained
  • 1 red onion sliced thinly
  • 2 pints blueberries
  • fresh thyme optional, to garnish
  • fresh basil cut into this strips, optional, to garnish
  • freshly ground black pepper to taste

Instructions

  • Preheat oven to 425F. In a bowl, combine softened goat cheese and honey until well blended.
  • Place the naan on a baking sheet. With the back end of a spoon or knife, spread the goat cheese evenly on the naan, leaving a one inch border. Top with cooked pancetta, red onion and a few sprigs of thyme.
  • Bake for 10 - 12 minutes until sides are golden. Add blueberries and return to oven for 3 minutes. Remove and top with thin strips of basil and pepper if desired.

Quinoa Lentil Salad With Blueberries and Toasted Pecans

This is not your ordinary brown rice salad, folks, this has blueberries, toasted pecans, barley, green lentils, red quinoa, scallions, mint and more!  This quinoa lentil salad is packed with goodness and deliciousness! The sweet and savory tastes go well together and it packs a whole lot of flavour into each bite. Enjoy!

A Quinoa Lentil Salad With Unique Combinations

In a roundabout way this salad was inspired by an appetizer I did last summer – Peppercorn Steak Crostini with Blueberry Balsamic Sauce.  While creating this I discovered that I absolutely love the combination of balsamic vinegar, blueberries and a touch of pure maple syrup.  I definitely needed to do something with them again. The balsamic vinegar and maple syrup penetrate the blueberries perfectly and meld together to create a sweet, fruity, tart taste that is truly memorable.  You can see how dark the berries get and when I was sauteing them.  It was all I could do not to gobble them up!

I think some goat cheese would be delightful in this as well.  You could also use almonds instead of pecans, parsley instead of mint and how about some roasted corn in there? This is a recipe that gives you the bones and you can make it your own.  It’s a great side dish for any BBQ feast.   You don’t even have to tell people you saw it here first!

Ingredients

  • 1 package brown rice with barley, green lentil and red quinoa blend (you can choose any blend that you prefer. Wild rice would be fantastic!)

Berry French Toast Casserole

This Berry French Toast Casserole mixes delicious berries with an even sweeter french toast and can be made with lots of tasty additions. Anyone that likes to eat breakfast for dinner will love this sweet treat that makes a great breakfast (or dinner!).  The crunchiness of the granola adds to the already wide variety of textures in this dish that everyone is going to love.

Berry French Toast Casserole: An All-Day Treat

Berry French Toast Casserole is now my favorite meal!  Oh boy, I could have this for breakfast, lunch and dinner!  The best thing is that you don’t need refined sugar when you’ve got the sweetness from all those berries PLUS I added some pure maple syrup and freshly squeezed orange juice.  Gotta love it, right?

If you’re like me and demand some texture in your food then I’ve got that for you too.  A delicious maple granola tops this treat – love that extra tasty crunch! My friend, Fran, from Not Yer Granny’s Granola hand-bakes it in small batches and it’s chock full of natural, healthy ingredients.   Of course, this doesn’t require three berries.  If you just want to use one that works just fine, too.  For a berry nut like me, I would have used 10 varieties if they were available to me!

Locally Bought & Locally Made

I love it when I can create a meal with locally made products. The berries are from Barrie Hill Farms, the delicious eggs, freshly baked bread, and pure maple syrup are from local markets and the milk is from a local company, Sheldon Creek Dairy. Don’t you love the little bottle shaped like a maple leaf for the maple syrup?  We’re very proud of our syrup up here, ha!

You can make this in a baking dish or let the kids help make up their own ramekins.  You can also prepare this the night before and just cover and refrigerate.  I simply poured the egg mixture over the bread and let it sit on the counter for 30 minutes before tossing it in the oven. The flavors were top notch so either way will work depending on your schedule.

This doesn’t have to be just for the weekends.   By preparing it the night before, it’s an easy and delicious way to start your weekday as well.  I especially love this recipe because it’s a year-round treat.  You can even use well-frozen berries in the winter!  I think we all need more french toast, don’t you?

Berry French Toast Casserole

You don’t need loads of refined sugar for tasty french toast. Sweeten it with berries, pure maple syrup and freshly squeezed orange juice.

Cook Time: 35 minutes
Total Time: 1 hour 20 minutes

Ingredients

  • 1 loaf whole grain bread or challah, farmer’s market bread – your choice
  • 8 eggs you can use 4 eggs and 4 egg whites if you prefer)
  • 1.5 cups unsweetened almond milk (or coconut milk, whole milk, skim milk)
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 2 tsp orange juice freshly squeezed
  • zest from 1/2 the orange
  • pinch of nutmeg
  • 2 cups fresh blueberries (or frozen)
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup granola
  • extra maple syrup for drizzling

Instructions

  • In a large mixing bowl, combine the eggs, milk, maple syrup, extract, orange juice, orange zest, cinnamon, nutmeg. Whisk well.
  • Oil a baking dish (about 9 x 13) or ramekins and fill with bread.
  • Pour the liquid mixture over the bread and allow it to sit for at least 30 minutes, mixing once or twice to be sure all parts of the bread are moistened.
  • Mix in the blueberries.
  • Bake the casserole at 350 F. for about 20 minutes. Remove and sprinkle with half of the granola; return to oven and bake another 15 minutes or until there is no longer any liquid between the bread.
  • Remove from oven and let sit for 5 minutes. Top with raspberries, blackberries and remaining granola. Drizzle with additional maple syrup.
