Beautiful tomatoes from Barrie Hill Farm is the best part about August!  There are so many delicious ways to incorporate these super healthy fruits into your diet and they freeze so beautifully so you can buy as many as your heart desires!

You can use basil instead of chives if that is your preference and, depending on the acidity of your tomatoes, you may want to cut back on the vinegar a wee bit. And hey – using balsamic instead of red wine vinegar could be interesting! As always, taste as you go!  Roasting the tomatoes is always a fun alternative as well.    There are so many ways to change a recipe up and make it your own.

Easy Tomato Vinaigrette

This easy Easy Tomato Vinaigrette is super flavorful and so versatile.  Use it on omelettes, pasta, steak, grilled fish or roasted vegetables like zucchini and eggplant.

Ingredients

  • 1 pint cherry or grape tomatoes
  • 3 tbsp olive oil, divided
  • 1 shallot finely chopped (add more if desired)
  • 1 tbsp red wine vinegar (or try balsamic)
  • kosher salt and freshly ground pepper to taste
  • 3 tbsp fresh chives, chopped (or use basil or parsley

Instructions

  • Cut half of cherry tomatoes in half. Heat 1 tablespoon oil in a medium saucepan over medium heat. Add shallot and cook, stirring often, until softened, about 4 minutes.
  • Add halved and whole tomatoes and cook, stirring occasionally, until beginning to release juices, 4-6 minutes. Mash some of tomatoes with a spoon.
  • Add 1 tablespoon vinegar and remaining 2 tablespoons oil; season with salt and pepper. Serve warm or room temperature; add chives just before serving.
  • DO AHEAD: Vinaigrette can be made (without chives) 2 days ahead. Cover and chill. Bring to room temperature and stir in chives.

You know I’m a huge fan of soup so when I saw this beautiful recipe in Debbie Adler’s latest cookbook,  Sweet, Savory & Free, I knew I had to make it.

I can’t think of a better way to celebrate summer than a bowl of this healthy goodness that everyone can enjoy!

Sweet Corn Soup (Gluten-Free) | Simply Fresh Dinners

Sweet Corn Soup

Sweet corn soup is the kind of dish you can have year round but the best part of summer is the deliciously sweet corn from the farmers' markets and when you use it in this dish, you'll be thinking of the second bowl before you're even half-way through the first
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 1 ear of corn
  • 1 small yellow onion, chopped
  • 1/2 cup coconut aminos
  • 1 clove garlic, minced
  • 2 celery stalks, diced
  • 1 small parsnip, peeled and sliced
  • 3 tbsp nutritional yeast
  • 2 cups coconut milk
  • Reserved kernels from soup
  • 2 scallions, chopped
  • freshly ground black pepper

Instructions

  • Scrape the kernels from the corncob, set aside about 3 tablespoons, and add the rest to a large pot over medium heat. Add the onion and stir until fragrant, about 1 minute.
  • Add the coconut aminos, garlic, celery, parsnip, and nutritional yeast and cook, stirring occasionally, until the garlic is fragrant and the vegetables are slightly tender, about 2 minutes.
  • Add the coconut milk and bring to a boil.
  • Lower the heat, cover the pot, and let the soup simmer until the vegetables are fork tender, about 20 minutes.
  • Transfer the soup in batches to a high-speed blender and puree until smooth. You can also use an immersion blender.
  • o make the topping: Toast the reserved corn kernels in a skillet over medium heat for about 2 minutes.
  • Serve the soup immediately, topped with the toasted corn kernels, scallion, and a grind of black pepper.

Sweet Corn Salsa

Sweet Corn Salsa is that delicious combination of sweet and spicy that is always a hit at summer get togethers.  Roasting freshly picked corn from the farm takes this dish to an over the top flavorfest!

I roasted the corn in a cast iron frying pan for about 10 minutes, turning as it cooked.  You can also toss it on your grill but to be honest, I just didn’t want to go outside in this  heatwave we’re having!

Fun Fact:  For every kernel of corn on a cob there is 1 strand of silk!

There are crazy big plants of basil at the farms so I decided to use it instead of cilantro and it’s a natural!  If you’d prefer cilantro though, go for it!

Creating salsas from freshly grown ingredients is one of my favorite things to do.  I have a rhubarb salsa that you would love too!

Sweet Corn Salsa with Asparagus Chips - Barrie Hill Farms

These tortilla chips came from the farm and are made from asparagus.  There are so many healthy alternatives now so we don’t have to ruin our healthy snack with sodium and calorie laden junk food.  I’m making up a healthy substitutions list so if you have some brand names to share, I’d love to hear about them.  That goes for all foods – sauces, chips, pasta, you name it.  I have been working on this list for awhile now so will share it soon!

Sweet Corn Salsa

It's corn season and I'm making the most of it.  Sweet and spicy salsa will be the hit of your weekend parties. Use asparagus chips for the best healthy dish!
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Course: Appetizer
Cuisine: Canadian

Ingredients

  • 2 cobs of corn
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 1/2 yellow or orange pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup basil or cilantro, chopped
  • juice of one lime
  • salt and pepper to taste

Instructions

  • Brush corn lightly in olive oil and season with salt. Heat cast iron fry pan on medium and sauté corn until kernels begin to char. (You can also grill the corn if you prefer) Set aside to cool.
  • In a medium bowl, combine tomatoes, onions, yellow or orange pepper, jalapeno, cilantro/basil, lime juice, and salt and pepper. . Add sautéed corn and stir to combine. Serve with tortilla chips.
