Chicken Corn Super Pie
Thin slices of cooked chicken or lean bacon
1/2 cup soft bread-crumbs
1 1/2 cups fresh corn kernels
3/4 cup milk
pinch each of salt and pepper
2 tbsp butter, melted
pinch of tarragon, basil, or curry (optional)
1. Spread bread-crumbs on the bottom of a well-greased pie plate. cover crumbs with thin slices of chicken or partially cooked and drained bacon.
2. Steam corn kernels for 3-4 minutes, the drain if necessary. Beat eggs lightly with a whisk and stir in corn, milk, melted butter, salt pepper, and herbs if you wish.
3. Add egg-corn mixture to pie plate. Bake in 325 F oven one hour or until a knife inserted in the center come out clean.
4. Allow pie to sit several minutes before cutting into wedges.
